Christmas Cookies

It’s almost Christmas Eve, which means it’s time to start making those cookies for Santa. This year I chose to make Kolacky. Kolacky originated in Central Europe. In Poland, Kolacky is spelled Kolaczki and in the Czech Republic the correct spelling is Koláčky.

Most recipes only contain flour, butter, and cream cheese. The dough is usually filled with an assortment of jams, but can also be filled with a nut mixture. In my recipe I like to add a pinch of salt and a small amount of sugar to the dough. I also add in pecan flour, which gives it a hint of nutty flavor to the dough.

I think Santa may approve of these delicious little treats, so go ahead and leave extra out for him.

Ingredients

  • ½ cup butter (1 stick), softened
  • 4 ounces cream cheese, softened
  • ¾ cup all-purpose flour
  • ½ cup pecan flour
  • 2 tablespoons sugar
  • pinch of salt
  • Jam

Instructions

To make the dough

  1. Beat the butter and cream cheese in a large bowl until smooth.
  2. Gradually add in the flours, sugar, and salt, blending until the mixture forms a soft dough.
  3. Wrap in plastic wrap and refrigerate for an hour.

To bake the cookies

  1. Preheat oven to 375° F. Line two baking sheets with parchment paper.
  2. Roll out dough onto a floured surface. The dough should have a thickness of about ⅛ inch.
  3. Cut into 2½ inch squares.
  4. Spoon 1 teaspoon of jam into the center of each square.
  5. Bring up two opposite corners of the square to the center; pinch tightly to seal and fold to one side.
  6. Place 1 inch apart on the baking sheets.
  7. Bake 10 to 15 minutes or until lightly browned.
  8. Remove and place on cooling racks; cool completely.
