Blueberry Crumble

A delicious summer treat.

Full of juicy blueberries and topped with an oat and walnut crumble. This dessert is perfect for summer. Top it off with a scoop of vanilla ice cream or whipped cream.

Ingredients

Blueberry Filling

  • 3 cups fresh blueberries
  • ⅓ cup white sugar
  • 2 tablespoons cornstarch
  • ⅛ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • 1 tablespoon freshly squeezed orange juice
  • 1 small orange, zested
  • pinch of salt

Oat Topping

  • ¾ cup old fashioned oats
  • ¾ cup all purpose flour
  • ½ cup chopped walnuts
  • ¾ cup brown sugar
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt
  • 8 tablespoons unsalted butter

Instructions

Prepare the blueberry filling

  1. Place all the ingredients into a bowl; making sure it is well combined.
  2. Place in the refrigerator while you prepare the topping.

Prepare the oat topping

  1. In a bowl;combine the oats, flour, sugar, cinnamon, nutmeg, and salt.
  2. Cut the butter into small cubes and work into the oat mixture.

Assemble and bake

  1. Preheat oven to 350F.
  2. Remove the blueberry mixture from the refrigerator and pour into a 9 inch baking dish. I used a 9 inch tart pan (without a removable bottom).
  3. Scatter the crumble mixture over top of the blueberries.
  4. Place in the oven and bake for 45 minutes.
  5. Allow the crumble to cool for 30 minutes before serving.
  6. Serve with vanilla ice cream or whipped cream.
  7. Enjoy!
