Full of juicy blueberries and topped with an oat and walnut crumble. This dessert is perfect for summer. Top it off with a scoop of vanilla ice cream or whipped cream.
Ingredients
Blueberry Filling
- 3 cups fresh blueberries
- ⅓ cup white sugar
- 2 tablespoons cornstarch
- ⅛ teaspoon cinnamon
- ⅛ teaspoon nutmeg
- 1 tablespoon freshly squeezed orange juice
- 1 small orange, zested
- pinch of salt
Oat Topping
- ¾ cup old fashioned oats
- ¾ cup all purpose flour
- ½ cup chopped walnuts
- ¾ cup brown sugar
- ¼ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ teaspoon salt
- 8 tablespoons unsalted butter
Instructions
Prepare the blueberry filling
- Place all the ingredients into a bowl; making sure it is well combined.
- Place in the refrigerator while you prepare the topping.
Prepare the oat topping
- In a bowl;combine the oats, flour, sugar, cinnamon, nutmeg, and salt.
- Cut the butter into small cubes and work into the oat mixture.
Assemble and bake
- Preheat oven to 350F.
- Remove the blueberry mixture from the refrigerator and pour into a 9 inch baking dish. I used a 9 inch tart pan (without a removable bottom).
- Scatter the crumble mixture over top of the blueberries.
- Place in the oven and bake for 45 minutes.
- Allow the crumble to cool for 30 minutes before serving.
- Serve with vanilla ice cream or whipped cream.
