Blackened Salmon with Mango Salsa

A quick and healthy weeknight recipe.

This delicious and simple recipe is packed with flavor. The mango salsa adds a touch of sweetness to the blackened salmon. The perfect blend of sweet and savory with a touch of spice.

Ingredients

Mango Salsa

  • 1 cup chopped mango
  • ½ cup chopped bell pepper
  • ¼ cup chopped green onion
  • Juice of half of a lemon
  • Juice of half of a lime
  • Salt and pepper to taste

Blackened Salmon

  • 3 or 4 filets of salmon (skin removed)
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper
  • 3 tablespoons butter
  • Juice of half a lemon
  • Juice of half a lime

Preparing the Mango Salsa

  1. Combine all ingredients in a bowl and chill until ready to serve.

Preparing the Salmon

  1. In a small bowl, combine all of the spices.
  2. Rub generously onto each salmon fillet.
  3. In a cast iron skillet, over medium heat melt butter.
  4. When the butter begins to sizzle add the fillets.
  5. Cook for 4 minutes on one side.
  6. Flip the fillets and cook for an additional 3 to 4 minutes, making sure to baste continuously.
  7. Once cooked, squeeze lemon and lime juice over the fillets.
  8. Top with mango salsa and enjoy!
