Ingredients
Mango Salsa
- 1 cup chopped mango
- ½ cup chopped bell pepper
- ¼ cup chopped green onion
- Juice of half of a lemon
- Juice of half of a lime
- Salt and pepper to taste
Blackened Salmon
- 3 or 4 filets of salmon (skin removed)
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ⅛ teaspoon cayenne pepper
- 3 tablespoons butter
- Juice of half a lemon
- Juice of half a lime
Preparing the Mango Salsa
- Combine all ingredients in a bowl and chill until ready to serve.
Preparing the Salmon
- In a small bowl, combine all of the spices.
- Rub generously onto each salmon fillet.
- In a cast iron skillet, over medium heat melt butter.
- When the butter begins to sizzle add the fillets.
- Cook for 4 minutes on one side.
- Flip the fillets and cook for an additional 3 to 4 minutes, making sure to baste continuously.
- Once cooked, squeeze lemon and lime juice over the fillets.
- Top with mango salsa and enjoy!
