Tuna Cakes

I love this recipe. Not only is it super easy but it’s also budget friendly. Sometimes I like to change it up and serve with a different topping. You can even go another step and throw in some jalapeño for some extra heat.

Tuna Cakes

  • 1/2 cup of red onion
  • 1/2 cup of bell pepper
  • 3 cloves of garlic
  • 3 cans of tuna
  • 3/4 cup of panko breadcrumbs
  • 2 eggs
  • 2 tablespoons of Dijon mustard
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper

Mango Salsa Garlic Aioli

  1. Set oven to broil.
  2. Finally chop red onion, bell pepper, and garlic.
  3. Mix in the canned tuna.
  4. In a separate bowl mix the eggs, Dijon mustard, salt, and pepper.
  5. Pour into tuna mixture and add in the panko breadcrumbs.
  6. Prepare a baking sheet by covering with tin foil and spraying with cooking spray.
  7. Form the tuna mixture into patties and place on a prepared baking sheet.
  8. Place in the oven under the broiler and cook for about 8 to 10 minutes or until nicely browned on both sides.
  9. Top with garlic aioli and mango salsa.
  10. Serve and enjoy!
