Roasted Pie Pumpkin

How to roast a pumpkin

Ingredients

  • 1 pie pumpkin
  • vegetable oil

Instructions

  1. Preheat oven to 375F (190C).
  2. Line a baking sheet with parchment paper.
  3. Cut the pumpkin in half.
  4. Scoop out the seeds and stringy bits.
  5. Brush the inside of the pumpkin with vegetable oil.
  6. Place the pumpkin onto the parchment lined baking sheet, cut side down.
  7. Roast for 40 to 45 minutes until the pumpkin is fork tender.
  8. Let the pumpkin rest until cooled.
  9. Scoop out the cooked pumpkin and place into a food processor.
  10. Purée the pumpkin until smooth.
  11. Use in desired recipe and enjoy!
