Ingredients
- 1 pie pumpkin
- vegetable oil
Instructions
- Preheat oven to 375F (190C).
- Line a baking sheet with parchment paper.
- Cut the pumpkin in half.
- Scoop out the seeds and stringy bits.
- Brush the inside of the pumpkin with vegetable oil.
- Place the pumpkin onto the parchment lined baking sheet, cut side down.
- Roast for 40 to 45 minutes until the pumpkin is fork tender.
- Let the pumpkin rest until cooled.
- Scoop out the cooked pumpkin and place into a food processor.
- Purée the pumpkin until smooth.
- Use in desired recipe and enjoy!
