Caprese Salad

The perfect side or appetizer

This salad is named after the Island of Capri. The colors of the Caprese Salad symbolize the colors in the Italian flag. You can serve the sliced mozzarella and tomatoes with just olive oil, balsamic glaze, fresh basil, salt, and pepper. I like to make a spice mixture and add it to the olive oil, just to give it an extra punch of flavor.

Ingredients

  • 3 tomatoes
  • 16 ounces of fresh mozzarella
  • 1/2 cup olive oil
  • 2 cloves of garlic (grated)
  • 2 teaspoons parsley
  • 2 teaspoons basil
  • 2 teaspoons oregano
  • 2 teaspoons crushed red pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons black pepper
  • 1 teaspoon salt
  • Balsamic glaze

Directions

  1. Mix together all of the spices.
  2. Whisk olive oil into the spices.
  3. Slice and layer tomatoes and cheese.
  4. Pour the olive oil mixture over the tomatoes and cheese. see note
  5. Drizzle with balsamic glaze.
  6. Serve and enjoy.

NOTE: You may not use all of the oil mixture. If you don’t, use it for another salad or toss it with some roasted vegetables.
