Sweet Potato Tacos with Spicy Coleslaw

A new way to enjoy Taco Tuesday minus the taco meat!

Ingredients

Sweet Potatoes

  • 6 cups of 1/2” cubed sweet potato
  • 1/2 tsp of salt
  • 1 tsp of paprika
  • 1 tsp of chili powder
  • 1 tsp of cumin
  • Olive oil

Spicy Coleslaw

  • 14 ounces of shredded cabbage
  • 1 cup of mayo
  • 1/4 cup of fresh lime juice
  • 1/2 of a jalapeño, grated
  • 4 green onions, chopped
  • 1/4 tsp black pepper
  • 1/4 tsp of salt
  • 1 tbs of sugar
  • 1/2 tsp of garlic powder

Additional Toppings

  • Avocado
  • Panela cheese
  • Hot sauce
  • Green onions

Instructions

Sweet Potatoes

  1. Preheat the oven to 400 degrees.
  2. Peel the sweet potatoes and cut into 1/2” cubes.
  3. Toss with olive oil and spices.
  4. Spread sweet potatoes onto a lined baking sheet and roast for 25 minutes.

Spicy Coleslaw

  1. Mix all ingredients together.
  2. Place in the refrigerator until ready to use.

Prepare the tortillas

  1. Heat a skillet on medium heat.
  2. Brush the tortillas with olive oil and toast in the pan on each side.

How to assemble the tacos

  1. Fill the tortillas with the roasted sweet potato, spicy coleslaw, avocado, panela cheese, hot sauce, and green onions.
  2. Feel free to experiment with whatever toppings you like.
