Ingredients
Sweet Potatoes
- 6 cups of 1/2” cubed sweet potato
- 1/2 tsp of salt
- 1 tsp of paprika
- 1 tsp of chili powder
- 1 tsp of cumin
- Olive oil
Spicy Coleslaw
- 14 ounces of shredded cabbage
- 1 cup of mayo
- 1/4 cup of fresh lime juice
- 1/2 of a jalapeño, grated
- 4 green onions, chopped
- 1/4 tsp black pepper
- 1/4 tsp of salt
- 1 tbs of sugar
- 1/2 tsp of garlic powder
Additional Toppings
- Avocado
- Panela cheese
- Hot sauce
- Green onions
Instructions
Sweet Potatoes
- Preheat the oven to 400 degrees.
- Peel the sweet potatoes and cut into 1/2” cubes.
- Toss with olive oil and spices.
- Spread sweet potatoes onto a lined baking sheet and roast for 25 minutes.
Spicy Coleslaw
- Mix all ingredients together.
- Place in the refrigerator until ready to use.
Prepare the tortillas
- Heat a skillet on medium heat.
- Brush the tortillas with olive oil and toast in the pan on each side.
How to assemble the tacos
- Fill the tortillas with the roasted sweet potato, spicy coleslaw, avocado, panela cheese, hot sauce, and green onions.
- Feel free to experiment with whatever toppings you like.
